Three Alarm Pickled Mushrooms

My parents came for a visit a few weeks back and my Mom made a batch of refrigerator dill pickles that were pretty dang tasty.  The pickles looked like they were pretty easy to make and it got the gears turning in my head about what would be some other fun stuff to pickle.

I went with mushrooms!

Three Alarm Pickled Mushroom Recipe

Ingredients

  • 8 oz button mushrooms
  • 2 serrano peppers
  • 2 cups water
  • 1 cup white vinegar
  • 1 Tablespoon sugar
  • 1 Tablespoon salt
  • 1/2 teaspoon black peppercorns
  • 1/2 teaspoon mustard seed
  • 1/2 teaspoon red pepper flakes

Prepare the mushrooms by wiping clean with a damp paper towel and trimming off the stem.

Mix the water and vinegar.  Add the salt and sugar and stir to dissolve.

Add the peppercorns, mustard seed and red pepper flakes to a 1 pint canning jar.

Place the serrano peppers and mushrooms into the canning jar.

Fill the jar completely with the brine, seal the lid and place in the refrigerator for three days.

Why The Name?

I figured these mushrooms needed one alarm for each type of pepper used in the recipe: serrano peppers, red pepper flakes and black peppercorns.

Despite all of the peppers these mushrooms are not overly spicy.  The real heat in a serrano pepper is in the seeds which are not directly exposed to the brine.  If you wanted to up the heat on these then you could simply cut the serranos lengthwise before pickling to expose the seeds.
